Thai Green Curry
This dish features the spiced and roasted pineapple rather than fresh and raw to help preserve the fruit better but also add a layer of flavour that was missing last time. Mandala’s take on a Thai Green curry featuring a house made curry paste, red peppers, roasted eggplant and baby corn, we paired it with our peanut saute tofu to give this dish a full blown flavour bomb.
Why We made This
We made this dish because Green Thai curry was one of our founders favourite lunchtime meal while walking the streets of Thailand. One of the Big 3 curry staples you can find anywhere, made 100% Vegan and Delicious
